Beef and Mango Wraps
Serves 4
Ingredients:
- 1 Tbsp. Dijon mustard
- 3 Tbsp. fresh lime juice
- 1 Tbsp. olive oil
- Coarse salt and pepper
- 1/2 medium red onion, thinly sliced
- 1 red bell pepper, seeded, cut into thin pieces
- 1 mango, peeled, and cut into 1/2 inch wide strips
- 4 whole wheat wraps or tortillas
- 4 cups loose spinach, trimmed
- 1 lb. cooked roast beef, thinly sliced
Directions:
- In a large bowl, whisk together mustard, lime juice, and oil; season with salt and pepper.
- Add onion, bell pepper, and mango, and toss to combine.
- Lay out tortillas or wraps and line each with spinach.
- Arrange beef slices down center of each wrap.
- Top beef with mango mixture.
- Fold two opposite sides of wraps, and roll up tightly.
- Cut in half and serve.
