Big Blueberry Muffins
Ingredients:
- 1 1/2 cups flour
- 1 cup fresh blueberries
- 3/4 cup sugar
- 1/3 cup vegetable oil
- 1/3 cup milk
- 1 egg
- 2 tsp. baking powder
- 1/2 tsp. salt
Topping:
- 1/2 cup sugar
- 1/3 cup flour
- 1/4 cup butter, softened
- 1 1/2 tsp. ground cinnamon
Directions:
- Preheat oven to 400 degrees F, and line a muffin tin with muffin liners.
- In a large bowl, combine 1 1/2 cups flour, 3/4 cups sugar, salt, and baking powder.
- Add egg, milk, and oil, and mix to combine.
- Gently fold in blueberries.
- In a separate bowl, make crumb topping by combining remaining flour, sugar, butter, and cinnamon; mix with a fork.
- Spoon muffin batter into muffin cups, filling to the top.
- Sprinkle crumb mixture over each muffin.
- Bake for 20-25 minutes, until done.

love this recipe, being a diabetic I will sub the sugar for splenda and also sub some of the oil for applesauce. just for less calories
