Blueberry Zucchini Bread
Ingredients:
- 3 eggs
- 2 cups sugar
- 1 cup oil
- 1 1/2 tsp vanilla
- 1 tsp salt
- 1 cup white flour
- 1 cup whole wheat flour
- 1 1/4 cups fresh blueberries
- 2 cups zucchini, grated
- 1 Tbsp cinnamon
- 1/2 tsp baking soda
- 1 1/2 tsp baking powder
Directions:
- Preheat oven to 350 degrees.
- With an electric mixer, beat together eggs, sugar, oil, and vanilla, until well combined and thickened.
- Add flour, zucchini, salt, cinnamon, baking soda, and baking powder; stir with a spoon just until blended.
- Carefully fold in blueberries.
- Pour batter into two greased bread pans.
- Bake for one hour.
