Bruschetta Chicken
Ingredients:
- 4 boneless, skinless chicken breast halves
- 1/4 cup vinegarette salad dressing
- 1 medium tomato, chopped
- 1/2 cup low-fat mozzarella cheese
- 1/4 cup fresh basil, chopped
Directions:
- Preheat grill to medium.
- Marinate chicken in 1/8 cup salad dressing, in refrigerator for at least 10 minutes.
- Cook chicken on grill until almost done.
- While chicken is cooking, combine tomato, remaining dressing, basil, mozzarella.
- Top chicken breasts with tomato mixture and keep on grill until cheese has melted.
- Serve over angel hair pasta.
