Carrot Cake with Cream Cheese Frosting
Ingredients:
- 1 egg
- 1/2 cup oil
- 1 cup honey
- 8 oz. soft tofu
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 2 tsp. vanilla
- 1/2 tsp. salt
- 3/4 cup grated carrots
- 2 cups whole wheat flour
- 1 cup chopped walnuts
Cream Cheese Frosting Ingredients:
- 1 cup cream cheese
- 2 Tbsp. honey
- 2 tsp. vanilla
Directions:
- Mix the following ingredients in a blender until smooth: egg, oil, honey, tofu, cinnamon, baking soda, vanilla, and salt.
- Pour mixture into a large mixing bowl.
- Mix in carrot and flour with an electric mixer.
- Stir in walnuts.
- Pour mixture into two 8-inch oiled and floured cake pans.
- Bake at 325 for 40-45 minutes.
- Let cool, and top with cream cheese frosting, if desired.
To make cream cheese frosting, combine all ingredients and beat with electric mixer until creamy and easy to spread.
