Cilantro Pesto Pasta
Ingredients:
- 1 lb. bowtie pasta
- 1 bunch fresh cilantro
- 5 cloves garlic
- 1 Tbsp. lime juice
- 1/4 cup Parmesan Cheese, grated
- 1/2 tsp. cayenne pepper
- 1/2 cup toasted pine nuts
- 1/2 cup olive oil
Directions:
- Cook pasta according to package directions.
- Place cilantro, garlic, vinegar, cheese, pepper, and pine nuts in a food processor and blend.
- Add olive oil and blend; add additional oilve oil to reach desired consistency.
- Drain cooked pasta, and return to pot.
- Add pesto to pasta, and stir over low heat until well blended and heated.
- Serve with grilled chicken, if desired.
