Easy Thin-Crust Pizza
Ingredients:
- 2 tsp. olive oil, plus more for baking sheets
- 2 whole-wheat sandwich wraps
- 2 oz. shredded Asiago cheese (1 cup)
- 2/3 cup part-skim ricotta cheese
- 1 medium tomatoes, thinly sliced
- 1 small red onion, halved and thinly sliced
- Salt and pepper
Directions:
- Preheat oven to 450°F.
- Brush two baking sheets with oil.
- Place one wrap on each sheet, and brush with 1 tsp. oil.
- Spread half of ricotta cheese on each wrap.
- Sprinkle Asiago cheese over each wrap.
- Place tomato slices and onion pieces to cover each wrap, and sprinkle with salt and pepper.
- Bake until crust is crisp and brown (20 to 25 minutes), rotating pizzas in oven so that they bake evenly.
- Cut in half or in quarters with a pizza cutter; serve immediately.
