Fresh Basil Pesto
Ingredients:
- 2 cups fresh basil leaves, stems removed
- 3 cloves garlic
- 3 Tbsp. pine nuts
- 1/2 cup extra virgin olive oil
- 1/2 cup Parmesan cheese, grated
- salt and pepper to taste
Directions:
- Put garlic in a food processor, and mince.
- Add basil, pine nuts, and salt and pepper to taste.
- Process, and while it is running, slowly add olive oil through the feed tube.
- Process until all ingredients are pureed.
- Add cheese and process until well mixed.
- Add additional olive oil to reach desired consistency.
- Serve with crackers, pita, or over pasta.
