Fruity Whole Grain Muffins
Ingredients:
- 1-1/2 cups quick oats
- 1-1/4 cups whole-wheat flour
- 1 t. baking powder
- ¾ t. baking soda
- ¾ t. ground cinnamon
- 1 C. raisins, dried cherries or dried cranberries
- 1 C. unsweetened applesauce
- ½ C. milk
- ½ C. brown sugar, firmly packed
- 3 T. vegetable oil
- 1 egg, lightly beaten
Directions:
- Preheat oven to 400°F.
- Line twelve medium muffin cups with paper baking cups or spray bottoms with cooking spray.
- Combine oats, flour, baking powder, baking soda and cinnamon in large bowl.
- In medium bowl, blend applesauce, milk, sugar, oil and egg; add to dry ingredients. Stir till dry ingredients are moistened.
- Fill muffin cups almost full.
- Bake 20 to 22 minutes or until deep golden brown.
- Cool in pan 5 minutes. Serve warm!
