Paremsan Orzo Salad


Ingredients:

  • 1 lb. orzo pasta, cooked and drained
  • 1/2 cup butter
  • 1/2 lb. fresh snow peas, julienned
  • 3/4 cup pine nuts, toasted
  • 1/2 cup grated Parmesan cheese
  • 2 Tbsp. fresh chopped parsley
  • 2 tsp. olive oil
  • Salt and black pepper

Directions:

  1. While orzo is cooking, sauté snow peas in olive oil over medium heat.
  2. Add pine nuts to the pan, and heat for 30 seconds.
  3. After orzo is done, drain, and return to pot; add butter and stir until melted.
  4. Add remaining ingredients together with orzo, and toss to combine.
