Paremsan Orzo Salad
Ingredients:
- 1 lb. orzo pasta, cooked and drained
- 1/2 cup butter
- 1/2 lb. fresh snow peas, julienned
- 3/4 cup pine nuts, toasted
- 1/2 cup grated Parmesan cheese
- 2 Tbsp. fresh chopped parsley
- 2 tsp. olive oil
- Salt and black pepper
Directions:
- While orzo is cooking, sauté snow peas in olive oil over medium heat.
- Add pine nuts to the pan, and heat for 30 seconds.
- After orzo is done, drain, and return to pot; add butter and stir until melted.
- Add remaining ingredients together with orzo, and toss to combine.
