Popcorn Balls
Ingredients:
- 2/3 cup popcorn kernels
- 1 cup reduced-fat margarine
- 1 cup honey
- 3/4 tsp. salt
- 2 tsp. vanilla
- Crushed Pecans (optional)
Directions
- Preheat oven to 350 degrees.
- Pop popcorn kernels in an air popper; once popped, place in a large roasting pan.
- In a medium saucepan, melt butter, honey, and salt together, stirring well.
- Bring mixture to a boil, and boil for one minute, stirring constantly.
- Stir in vanilla.
- Pour honey mixture over popcorn and stir to coat evenly.
- Bake for 25 minutes, stirring every 5 minutes.
- Let popcorn cool slightly, until it is cool enough to handle.
- Grease hands with butter or cooking spray, and mold popcorn into 1-inch balls.
- Roll balls in crushed pecans, if desired.
- Place balls on wax paper to cool before eating.
