Ingredients:
1 Tablespoon of oil
1 Medium onion chopped finely
1 Green bell pepper, chopped
3 Cloves of garlic
2 1/2 cups of water
1 Can of kidney beans, rinsed and drained
1 Cup of uncooked white rice
1/4 Cup of chopped bacon
1/2 tp of pepper
1/2 tp salt
1 tp of cilantro
1/2 of cumin
1/4 cayene pepper
Directions:
1. Heat oil in a non-stick skillet on medium heat.
2. Add the onion, bell pepper, and garlic. Let sautee.
3. Add water beans, rice and bacon. Let cook for 15 to 20 minutes.
4. Add salt, pepper, cilantro, cayene and cuman. Stir and serve.
