Roasted Acorn Squash
Ingredients:
- 2 acorn squash, halved
- 3 Tbsp. butter
- 2 onions, thinly sliced
- 3 cloves garlic, minced
- 1 tsp. chili powder
- 1/2 tsp. ground nutmeg
- 1/2 tsp. salt
- 1/2 tsp. ground pepper
Directions:
- Preheat oven to 350 degrees.
- Place acorn squash halves on a baking sheet and bake for 50 minutes until tender; let cool.
- Melt butter in a large skillet over medium heat, and saute the onions.
- Discard seeds from the squash, spoon out the flesh and chop into pieces.
- Add squash and spices to skillet.
- Cook and stir until well mixed and squash is heated.
- Serve immediately.
