Sauteed Spinach
Ingredients:
- 2 Tbsp. olive oil
- 4 garlic cloves, minced
- 4 bunches flat-leaf spinach, trimmed
- 2 Tbsp. lemon juice
- Salt and pepper to taste
Directions:
- Heat olive oil in a large skillet over medium heat.
- Add garlic, and cook, stirring constantly, until it begins to brown.
- Raise heat to high, and gradually add spinach.
- Cook spinach 3-4 minutes, until tender.
- Drain liquid from skillet; add lemon juice, salt and pepper.
