Spice Rubbed Turkey with Sweet Potatoes
Ingredients:
- 1 1/2 tsp. dried crushed rosemary
- 1 tsp. sweet paprika
- Coarse salt and pepper
- 2 Tbsp. fresh lime juice
- 6 tsp. olive oil
- 2 boneless, skinless turkey breast halves
- 2 sweet potatoes, halved lengthwise
Directions:
- Preheat oven to 400 degrees.
- In a small bowl, mix rosemary, paprika, 1 1/2 tsp. coarse salt, 1/2 tsp. pepper, lime juice, and 4 tsp. oil. Rub all over turkey.
- Leaving space between them, place turkey breast halves in the center of a baking sheet.
- Brush cut sides of sweet potatoes with remaining 2 tsp. oil; place cut side down on baking sheet with turkey.
- Roast until internal temperature of turkey reaches 160(F, or about 50 minutes (sweet potatoes should be tender).
- Remove from heat, and let stand 10 minutes, loosely covered with aluminum foil.
- Cut turkey into thick slices. Cut sweet potatoes into wedges. Transfer food to serving platter and drizzle with any juices remaining on baking sheet. Serve immediately.
