Toasted Crab Baguettes
Ingredients:
- 12 oz. crabmeat, flaked
- 1 baguette
- 1 can reduced-fat condensed cream of celery soup, undiluted
- 1/3 cup grated Parmesan cheese
- 1/4 cup chopped celery
- 1/4 cup sliced scallions
- 1 Tbsp. lemon juice
- 1/8 tsp. grated lemon peel
Directions:
- In a medium sized bowl, combine crabmeat, soup, celery, scallions, lemon juice, and lemon peel, until well mixed.
- Cut baguette into thin slices, and arrange slices on 2 ungreased baking sheets.
- Broil bread slices for 1 minute on each side, or until lightly toasted.
- Spread a spoonful of crab mixture onto each slice, and top with Parmesan cheese.
- Broil 2 more minutes, until slightly brown.
