The USDA states that you can place hot food directly into the refrigerator if you desire. You could also rapidly cool the food in an ice water bath before refrigeration. Refrigerators should be set to a temperature of 40 °F or below. It is important to consume cooked leftovers within 4 days. In addition, make sure any food that is left out at room temperature for more than 2 hours is discarded.
